The Blue Hour
1/2 oz Mezcal, 3/4 oz Blueberry-Cardamom Shrub, 1/2 oz Yellow Chartreuse, 1/2 oz Fresh Lime Juice, 1/4 oz Agave, 2 dashes Orange Bitters, Egg White
If using an egg white, dry shake all ingredients first (without ice) to create a luxurious foam. Add ice and shake again—hard—until well chilled. Double strain into a coupe glass. Garnish with a few dried blueberries on a cocktail pick.
